- The Story
Bob and Jim Clark own and operate the Canadian Empress. One of their favourite desserts growing up was their mother's "Carnival" dessert. Mrs. Clark senior has since passed on, but the Clark sons knew that by placing the dessert on the ship's menu, they would be able to continue enjoying it more frequently for years to come.

Mrs. Clark's Empress Carnival
1/2 Cup of Raisins
2 Cups of Strong Coffee
4 Tablespoons of Minit Tapioca
1 Cup of Whipping Cream
1/2 Cup of Sugar
1 Teaspoon Vanilla
A Pinch of Salt
Serves 4
- Directions:
Simmer the raisins in strong coffee for 5 minutes. Stir constantly while adding the tapioca slowly. Cook until thick and then add sugar, vanilla and salt. Chill in the refrigerator until set. Whip cream until stiff peaks are formed. Fold the raisin mixture carefully into the whipped cream. It is best served in a crystal stem glass. Garnish as you wish.
